Salsa for Santa Maria Tip-Tip


2 cloves garlic
1/2 sweet onion, cut into 8 pieces
3 or 4 jalapenos or 4 pretty hot green chiles, cut into chunks
Handful of cilantro. If you don’t like cilantro substitute Italian parsley
6 Roma tomatoes, cut into 6 or 8 pieces
1 t. Salt
Juice from one lime
1 T. Red wine vinegar
1 T. Olive oil

Drop garlic cloves into feed tube of running food processor, process until finely minced.
Add onion and chiles, pulse to make medium chunks. Add cilantro or parsley, tomatoes, salt, lime juice, red wine vinegar and olive oil. Pulse until fairly chunky consistency. Correct the seasoning.
